Pumpkin Soup with Chili Cran-Apple Relish

I made it out last night! Our ward has "Tasty Morsels" Group. The girls in our church group get together and bring something based on a theme. Last night's theme was Pumpkin, Spice, and Anything Nice. I am a lover of pumpkin. We stock up on pumpkin puree when its on sale kind of lover of pumpkin. I was starting to go a little crazy with my limited social interactions. Justin was a huge help, doing all the shopping, and dicing of the apple, and encouraging me to go. (I think he even suggested I make the soup instead of a pumpkin bread).

Thanks to Rachel Ray's Pumpkin Soup and Chili Cran-Apple Relish and my ability to follow a recipe my contribution was a pretty big hit, if I do say so myself. That is why I made it--because its tried and true. I first had this soup at a girl's night holiday dinner that McKenzie hosted when I worked in Utah. She went all out, with courses and decorations, and artichokes. This soup was on the menu, and I've been making it ever since.

I only used one cup of cream, because my pot was getting a little full. I liked it better that way, the color is more appetizing and the flavors were more robust.

I didn't know you made pumpkin soup :) It's a really common soup in Australia - everyone loves it here! And I couldn't believe that people hadn't heard of it in America :)Looks delicious :)
