Fruit Crisp

I peeled and sliced peaches and apples with the intent of a pie. But when it came time to making the crust my NYC kitchen frustrated me too much and I didn't want to spend the time finding a place to clear the counter onto, sanitizing it, and then re-cleaning it after I was done.

So, I made a crisp. And it was delicious!

Filling:
4 Peaches
2 Apples
2 Tablespoons Lemon Juice
1/2 Cup Sugar
1 Tablespoon Flour
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg

Peel and slice fruit, top with lemon juice. Toss fruit with dry ingredients. (You can toss them right in the cake pan you will be using.)

Crisp:
1 Cup Oats
1 Cup Flour
1 Cup Brown Sugar
1/4 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/2 Cup Butter (I used real unsalted butter)

Stir dry ingredients together, and cut the butter into the mixture. (If the butter is really cold its easiest just to do it with your hands)

Pour the crisp mixture over the fruit in a cake pan. (If you want tall pieces with thick crisp use a 9 by 9.)

Bake 350 for 35 minutes (if fruit is cut thinly).
