Ginger (Almost) Snaps


Justin loves ginger snaps. I love soft chewy cookies, so this is a good compromise.


¾ Cup Shortening
1 Egg
1 Cup Sugar
½ Cup Molasses
2 Cups Flour
2 tsp Baking Soda
½ tsp Salt
1 tsp Ginger
1 tsp Cinnamon

Cream shortening, egg, and sugar. Add the molasses. Sift the dry ingredients together and add to creamed stuff. Roll walnut sized balls in sugar. Bake 350 for 7 minutes, let rest on hot pan for one-two minutes and cool on rack. (Bake 8-12 minutes if you want snaps.)

to serve, drizzle with melted chocolate - because let's face it, everything tasted better drizzled with a little chocolate....

(you can melt the chocolate over a double boiler if you're morally opposed to melting it in the microwave....)
