Cous Cous with Vegetables


Horray for easy healthy dinner! This took me twenty minutes to make, considering it takes someone I know a half hour to make a sandwich time may vary.

Chop carrots into slices (I used two jumbo carrots), Slice one Pepper (I used a yellow one, but I think Red would be prettier), slice 2 celery stocks. I didn't have an onion, but if you have one dice that now, and if you are using a garlic clove chop that now, I just use minced garlic in water.)
Start 2 cups of water/chicken stock to boil. (i used 1 1/2 Cup water, 1/2 Cup Chicken Stock)

Heat Butter and EVOO in high sided frying pan (that has a tight fitting lid) Saute carrots, pepper (onion if you have it) Add some garlic, then some frozen Green Beans, and Green Onion. Keep over heat until the beans are warm. Salt and Pepper the vegetables to taste.
Add a half a cup of mango chutney (its mango jam-like-stuff with some indian curry seasoning) to the boiling liquid.
Remove frying pan from the heat, and push the vegetables to the edge to make a well in the middle of the pan. Pour the boiling liquid into that well. Then sprinkle about 2 cups of Cous Cous mostly into the well, but when that is full over the top of the veggies. Put the lid on tight and let it sit for 5 minutes.
Tips: If you aren't using the chutney you may need to add some spice (red pepper flakes, or lemon pepper would probably work). My favorite kind of cous cous is the triple color, sun dried tomato, spinach, and regular. It doesn't cost more than the regular stuff, is prettier, and tastes better. We topped it with parmasean cheese, cause we like cheese. It would be good with chicken, but felt like a dinner without the hastle of meat.

Wow, that looks fantastic. It's making my mouth water. I can never resist food. I love it too much. The only thing I'll never eat is Brussel sprouts. Anyone who likes eating them is completely out of their mind. Brain washed more likely.
